Some gelatin recipes prescribe sprinkling unflavored gelatin over cold liquid and waiting through a separate bloom. Food Network Kitchen's method instead combines these powders with cold water in the saucepan and proceeds to controlled heating; it does not state a separate waiting time. Follow this formula rather than importing a bloom time from a different gelatin product or recipe.
Mix until no dry pockets remain around the edges. Stir deliberately rather than whipping. Vigorous whisking adds foam, which later occupies the tiny bear details and leaves bubbles on the surface.

Stir across the bottom and into the corners so concentrated material does not remain against the pan. Do not raise the heat to shorten the four-minute stage. A full boil is outside the tested method, and evaporating extra water changes the formula.

This timing matters. Acid-sugar coating is not a shelf-life treatment, and citric acid in a candy does not replace verified preservation controls. Coating a large batch early can draw moisture to the surface and turn a clean finish into syrup.
For a smaller service, keep the ratio intact by weighing the complete coating mixture, then divide it in the same proportion as the number of gummies being served. Do not estimate separate pinches of acid and sugar into each bag. Leave the rest uncoated and refrigerated, or choose a tested recipe that provides a different storage system.
