Cook slowly and stir constantly

Put the butter, half-and-half, corn syrup, granulated sugar, brown sugar and table salt in the saucepan. Keep the vanilla beside the prepared pans; it goes in after cooking.

Set the pan over medium-low heat. Stir constantly as the butter melts and the sugars dissolve, then attach the thermometer and continue cooking slowly while stirring constantly. Cool, cover and chill before cutting

To release a slab, loosen its edges with a butter knife or offset spatula and invert it over a cutting board. If it feels very hard, wait until it warms slightly before trying to knock it free; the tested recipe warns that a very cold slab can shatter. Keep the board flat and clear so it cannot slide.

Cut the slab into 1-inch squares. A long knife can make straighter rows than a short paring knife. Press down with controlled, even force rather than sawing toward your other hand. If caramel clings heavily to the blade, pause and let the slab firm in the refrigerator again.
