Its base recipe does not require baking soda, though the author offers soda as an option for a lighter crunch. A Utah State University Extension peanut brittle formula, by contrast, cooks sugar, corn syrup and water, then adds butter and peanuts before baking soda and vanilla go in off heat.
Both belong in the hard-crack family
The strongest overlap is their finish. The Exploratorium's hard-crack guide places both toffee and nut brittle in the 300°F to 310°F hard-crack stage. At that stage, syrup dropped into cold water forms hard, brittle threads because very little water remains.
That range describes a recognised sugar stage. It is not permission to choose any number within it for any recipe. King Arthur's English toffee technique is built around 300°F, and the Utah State brittle formula also names 300°F. Follow the exact endpoint printed in the tested recipe you are making. If it gives an altitude adjustment or asks you to calibrate the thermometer, apply that recipe's directions rather than borrowing a number from another candy.
For either candy, clip the thermometer so its sensing area sits in the syrup without touching the bottom of the pan. Read it at eye level, keep the display visible, and arrange a heat-safe landing place before cooking begins. Toffee starts with the butter-sugar relationship
In buttercrunch-style toffee, butter is part of the cooked base rather than a small finishing addition. King Arthur describes simmering butter, sugar, water, salt and a little corn syrup, then taking the mixture slowly to 300°F. Rushing the heat can separate the butter from the sugar or burn material against the pan bottom. The source advises a gradual cook and close attention as the syrup passes about 280°F because the temperature rises faster near the end.
The finished base can stand alone. Chocolate and nuts are familiar additions, but their placement varies. One recipe may put nuts below the toffee and chocolate above it; another may stir nuts through or omit them. A layered chocolate finish changes flavour, handling and allergen information, but it does not create the toffee base.
Baking soda is not a universal toffee rule. King Arthur's base buttercrunch omits it, while the optional variation explains that gas bubbles trapped during cooling make the bite lighter. If a tested toffee formula calls for soda, measure it and follow the stated mixing step. If it does not, leaving the candy dense is not an error.
Brittle puts the inclusions inside the sugar matrix
In a conventional nut brittle, the nuts are not merely a finish; they are held throughout the cooked candy. The Utah State Extension example begins with two cups sugar, one cup white corn syrup and one-half cup water. It adds one tablespoon butter and two cups raw peanuts, cooks to a light brown 300°F stage while stirring, then adds one teaspoon vanilla and three teaspoons baking soda off heat before pouring onto a greased, sided baking sheet.
Those quantities belong to that one tested formula. They are not a master ratio for every brittle. A microwave brittle, sesame brittle or family recipe may use different ingredients and order. The safe rule is to keep each recipe intact, especially the pan size, endpoint and late additions.
Baking soda makes the brittle foam. The expansion spreads tiny gas pockets through the syrup before it sets, creating a more porous piece than an unaerated glassy candy. This is why the bowl or saucepan must have generous spare capacity and why the prepared sheet must already be beside you. Add only the stated amount: extra soda is not a reliable shortcut to tenderness, and it changes both flavour and structure.
The cooling step reveals the real difference
Both candies leave the pan as flowing syrup and become brittle only after cooling. Prepare the exact surface named in the recipe before cooking: that may be a parchment-lined square pan for a uniform buttercrunch sheet or a greased, sided baking sheet for brittle. Do not substitute an unprotected counter.
Pour away from your body and keep hands out of the syrup path. Do not touch, taste, spread with bare fingers or try to rescue a dropped inclusion. Hot cooked sugar adheres to skin and can cause a serious burn. Children and pets should remain outside the work area until the pans, utensils and candy are completely cool. If hot syrup contacts skin, King Arthur's caramel safety guidance says to rinse promptly with cold water rather than wiping at the syrup; seek medical care for a serious burn.
Leave the sheet undisturbed until fully cool. Toffee topped with chocolate may need additional setting time before it can be turned over, cut or broken. Brittle needs its aerated structure to harden before handling. A warm bend does not prove that the endpoint was wrong; judge the intended snap only after the candy has cooled as its recipe directs.
Break the sheet on a stable board, controlling the fragments rather than striking it near faces or bare feet. Use a knife only when the recipe recommends cutting, and keep the other hand outside the blade path. Irregular pieces are normal for brittle and many toffees.
Which one suits the job?
Choose toffee when the buttery cooked base is the point. It suits a neat layered piece, a chocolate finish, or a dense crunch that dissolves into a pronounced butter-caramel flavour. It can also be made plain when you do not want nuts or chocolate, provided the chosen tested recipe is plain.
Choose brittle when you want nuts distributed through each shard and a sugar matrix that may be deliberately aerated. It is a natural fit for irregular pieces and for recipes where the inclusion-to-candy balance matters more than a separate topping.
If allergies are the deciding factor, the name is almost useless. Plain-looking toffee can contain milk; nut brittle can contain peanuts, tree nuts and milk; chocolate may add milk, soy or another labelled allergen. Read the complete ingredient list every time.
Store the finished candy for snap, not softness
Let toffee or brittle cool completely before packing it. Trapped warmth can create condensation, and moisture softens the clean snap these candies are meant to have. Separate layers with parchment or waxed paper and use an airtight container in a cool, dry place, unless the tested recipe gives different storage directions. Keep strongly scented foods away from the container.
For a gift, list every ingredient and identify the specific nuts. The US Food and Drug Administration lists milk, peanuts, tree nuts, soy and sesame among the nine major food allergens and advises people with food allergies to read labels and avoid their allergens. Before choosing between a toffee and a brittle recipe, place them side by side and check:

- The exact endpoint: What temperature does this formula name, and does it require calibration or altitude adjustment?
- The pan and thickness: Is the candy poured into a pan, spread on a sheet or divided another way?
- The finish: Is chocolate added, and must it set before breaking?
- The storage instruction: What does this recipe say about container, temperature and time?
- The allergens: Which milk, peanut, tree-nut, soy, sesame or other ingredients appear on the actual labels?
That checklist preserves what is useful about the names without pretending every household formula is identical. Toffee usually gives you a butter-led, dense crunch. Brittle usually gives you nuts in a sugar-led, often aerated snap. The tested recipe supplies the final truth.
